1. Aioli sauce
Ingredients
- One egg
- ½ clove of garlic
- natural or powdered parsley
- sunflower oil
- One tablespoon of vinegar (15 ml)
- salt to taste
Preparation
- Crack the egg into the blender jar.
- Add a pinch of salt and a splash of oil.
- Chop the garlic and parsley and put them in the blender.
- Add the vinegar and salt.
- Put the mixer on the minimum power and add the oil gradually. Keep beating while emulsifying until the mayonnaise is formed with the green dots of parsley.

2. Pink sauce

- ketchup, to taste
- One teaspoon of mustard (5 ml)
- sunflower oil
- vinegar
- salt to taste

- Crack the egg into the blender jar.
- Add a pinch of salt and a splash of oil.
- Put the mixer on the minimum power and add the oil gradually. Continue beating until mayonnaise is formed.
- When the mayonnaise is almost ready, add the mustard and as much ketchup as necessary to make the sauce pink. Go testing as you add it to avoid excess.
- Finish beating, adding more oil if necessary.
3. Brava sauce
Ingredients
- 700 g of crushed tomato
- One cayenne chili
- One onion
- Two tablespoons hot red paprika
- Three tablespoons olive oil
- salt to taste
Preparation
- Heat a skillet over medium heat and add the oil.
- When it is hot, add the chopped onion and chili.
- Add a little salt and fry until the onion begins to brown.
- Add the hot paprika.
- Sauté for a couple of minutes so it doesn’t burn.
- Add the crushed tomato and stir well.
- Add salt to taste.
- Cover and leave over low heat for approximately 12 minutes, stirring occasionally so it does not stick.
- Remove from the heat and pour the sauce into the blender jar.
- Blend until a smooth, lump-free sauce is formed.
- Pass it through the potato mill or a Chinese filter on the plate where you will serve it.
- The brava sauce can be served both hot and cold.
4. Honey and mustard sauce

- One egg
- Honey
- mustard
- sunflower oil
- vinegar
- salt
Preparation
- Crack the egg into the blender jar.
- Add a pinch of salt and a drizzle of oil.
- Put the mixer on low power and add the oil little by little. Keep beating until mayonnaise forms.
- When the mayonnaise is almost ready, add the mustard and honey. Meanwhile, gently stir with a spoon until thoroughly mixed. The amount of love and mustard will depend on how strong you like the flavor of this sauce.
- Finish beating by adding more oil only if necessary.
5. Deluxe sauce
Ingredients
- Three tablespoons of 35% fat cream (whipping cream)
- Two tablespoons of mayonnaise
- juice of 1/2 lemon
- One teaspoon of sugar
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- fresh chives stalks
- pepper
- salt
Preparation
- Pour the cream into a bowl and add the lemon juice. Beat with the rods until the mixture thickens and a sour cream forms.
- Add the mayonnaise and stir until smooth and creamy.
- Add the sugar, onion, garlic powder, plenty of pepper, and a pinch of salt.
